FLUFFY SPANISH OMELET
What You Will Need
1. 4 eggs
2. Mushrooms
3. Tomato
4. Mixed Peppers
5. Potatoes
6. Cooked chicken slices
7. Tablespoon of Olive Oil
Preparation
1. Dice a medium sized potato, and boil for 10 minutes.
2. Slice a few mushrooms and a small tomato.
3. Dice about quarter of a cup of mixed peppers.
4. Whisk the whites of 4 eggs until fluffy.
5. Put a tablespoon of Olive Oil in a pan and heat.
6. Put the potatoes in the hot oil and heat until a little browned, then add
the mushrooms and peppers.
7. Once the mushrooms have softened, add the tomato and chicken and heat for
a further minute.
8. Fold two egg yolks into the egg while, do not mix or the white will lose
its fluffy texture.
9. Add the egg mix to the pan, mix briefly and then heat for about 2 minutes.
10. Place the pan under a grill to brown the top and then serve. Optionally,
serve with a slice of dry toast.
Nutritional Information
An easily prepared meal with a selection of vegetables for carbohydrates, fibre
and vitamins. Moderate fat levels and high protein for a well balanced meal.
Adjust the levels of potato for carbohydrate, possibly adding a slice of dry
toast if required.
