We've (Reflex Nutrition) been in the business of making sports nutrition
supplements for well over a decade. And when I say "making supplements"

At Reflex Nutrition we are continually approached by customers asking
for a comparable product that would directly compete with a certain well
known protein blend comprised of whey, micellar casein, egg and glutamine
peptide. I'd be the first to admit that it's no easy task, and perhaps
even controversial. Since we're not in the business of simply making a
direct copy we were faced with the task of making a superior alternative
here in our factory in the U.K
But before I continue, I'd like to address a misconception when people
claim "all whey protein derived from cheese manufacturing is denatured
and does not contain any undenatured protein fractions originally found
in native whey."
Technology has moved on dramatically in the dairy industry and it's fair
to say that the vast majority of whey protein offered today is vastly
superior in terms of composition and quality compared to say 10 years
ago. For quite some time we've listed the various protein fractions found
in our whey protein products on the label. The percentages of fractions
are calculated by lab analysis. i.e the whey protein is tested for whey
fractions after it is manufactured. They are undenatured. I'm sure you
may have been told otherwise, especially if you have been taking supplements
for a while. In fact I'm sure you've been told that the process of pasteurising
whey protein will render it useless, as will the process of making cheese
with pH changes. There is some truth in this, but only some; we know because
we are the only ISO9001 registered supplement company in the world to
operate an onsite pasteurisation facility for our Whey Refresh product.
Our production manager has been pasteurising milk products longer than
most supplement companies have been in business. We know the exact amount
of time and temperature necessary to pasteurise whey protein successfully
without denaturing the protein fractions. So when does whey protein become
denatured?? When you pasteurise whey protein for longer periods of time
than necessary the protein molecules will denature changing their structure
and electrical charge – thus losing their original benefits. You
can see this yourself at home by simply mixing some of your whey protein
with water and heating it. Let it simmer for one minute, let it cool,
and you'll be left with a gooey mess. Nearly all the whey fractions will
have become truly undenatured.
Now let's imagine that scenario in a full scale dairy production line.
It would be a total disaster! Hence dairies are very careful to use the
legal minimum amount of heat to ensure that the whey does not ruin the
heat exchangers in their pasteurisers.
When milk is pasteurised it is heated via a special heat exchanger to
72 degrees C and held at that temperature for 20 seconds. The milk then
returns back into the heat exchanger where the heat is removed to cool
the milk down to 25-30 degrees C. This process is very quick and has little
effect on the protein fractions.
Gustavo Bounous and Peptide Fusion Protein
Gustavo Bounous is famous within the whey protein industry for his fantastic
work with the effects of whey protein and immune function. Specifically
he has worked extensively with the effects that whey protein has on glutathione
levels in the human body – the master anti oxidant in our bodies.

in the field of whey protein and perhaps of more relevance their huge
expertise with preserving whey protein fractions in their native undenatured
state. At this point I will tell you that Glanbia uses sweet dairy whey
derived from cheese manufacture for their whey protein products and have
always done so. Reflex Nutrition use a number of different products from
Glanbia ranging from bioactive whey proteins through to their latest and
most exciting whey fraction called ActiNOS.
To conclude then, it is proven scientifically, that native undenatured
whey fractions from cheese manufacture are indeed widely available. They're
also one of the three main ingredients in our new ultimate protein powder
